Consumers and Consumption The first four chapters of this book have discussed the dependence of the population on wheat bread, the reasons for this dependence, the changes in production which enabled the market (and non-market) demand to be met, and the regulation of the market. A further topic, to be dealt with in Chapter 6, is the way in which grain was brought to market, and the development of a national market. Much of the remainder of the book is concerned with analysing the volume and value of bread consumption, and establishing estimates of this consumption on an annual basis.
