ABSTRACT

In this chapter the residue evidence in the form of fish bones associated with both fish sauce and salsamenta is described in terms of their context. Fish bones are identified as allec at ports and docking facilities, discarded in layers beside amphora and inside broken amphora which are discarded in rubbish pits, and inside various small vessels which are subsequently discarded in rivers. They can also be found in layers inside the cetariae at the main processing sites as well as in sealed environments in shipwrecks. Conclusion are drawn, based on the previous two chapters: on modern fish sauce and the experimental approach, as to the nature of these products. Allec is reconceived, not as a bony fish paste fit for slaves and the poor, but as a concentrated form of liquamen which could be rebrined to harvest fish sauce away from the processing site.
