ABSTRACT

Whether it be because butter and cheese have to be made in the country, and centres of teaching arise first in towns, or whether it be because women's work has, in all industrial branches, been the last to receive scientific attention, certain it is that Dairy Schools are of quite recent development, and certain also it is that they seem destined to exercise a most important influence over country life—the country life of women especially. "Each year brings pupils, who are thoroughly in earnest in their desire for knowledge, in increasing numbers." So writes Mr. Carroll of the Glasnevin Dairy Schools, Co. Dublin, adding that there are " evidences of improvement in the dairy produce of the country through the instruction thus given."
