ABSTRACT

In addition to the two most important factors that have a major impact on food demand (i.e., population and income), a number of other factors can also greatly affect food demand. In this chapter, how some such factors affect food demand is explained, including conventional factors such as changes in the prices of related foods and changes in consumer tastes and preferences, and emerging forces such as urbanisation, globalisation, and internet shopping. In view of the arrays of factors that induce consumption changes, this chapter calls for government food policies to be dynamic and responsive.
