Total Prep Time: 30 minutes Total Dry Time: 1½ hours for curing (24-72 hours for a full cure) Total Time: 2 hours (24-72 hours for a full cure)

Why This Works-There are several ways to obtain a positive model to create a mold in order to cast the lobster tail: purchasing a plastic lobster (12” × 6” × 2”) on Amazon.com (for about $6); purchasing a lobster at a local supermarket for roughly $15; going to a restaurant, ordering a lobster tail (at Outback Steakhouse® for $10.99 or one of the best specimens can be found at The Melting Pot® for $37.95 as part of a fourcourse meal), and bringing the shell home-freeze the shell upon returning from the restaurant so it doesn’t spoil or degrade. Casting and molding a real cooked lobster tail is too fragile. Ultimately, the best and most economical way is to start with a plastic lobster.
