ABSTRACT

This chapter provides the range of food and drink service operations available in the market place. It describes a range of variables that can be used to classify food and drink service operations into different sectors. The chapter explores classify different food and drink service operations into a series of useful categories. Another seemingly sensible approach could be to classify the operation by the type of food it serves. The food and drink service industry operates under a myriad of business formats ranging from sole proprietor 'mom and pop', through franchising to tenancy and lease agreements. The relationship with the food and drink service providers is an open and direct exchange between the customer and the provider. There are a number of food and drink service experiences in this story: Starbucks, the University salad bar, the trolley on the train, Dishoom, the bar in the theatre. There is huge variety of different food and drink service operations available to customers.
