ABSTRACT

This chapter focuses on the wide variety of processes available for food and beverage production. It describes the principles, practices and complexity of modern food safety legislation. The chapter explores the contribution to profitability of using the correct food and beverage production method for a particular type of outlet. It explains Match food and beverage service to an appropriate food and beverage production method. Food production may be defined as that phase of the food flow mainly concerned with the processing of raw, semi-prepared or prepared foodstuffs. Food production methods in the catering industry evolved over a period of time when there was an abundance of labour. Convenience foods may be introduced into a traditional production kitchen. Centralized production methods involve the separation of the production and service components of the food flow system either by place or time or both. As with food and beverage production, there are a number of food and beverage service methods.
