ABSTRACT

This chapter considers the knowledge, understanding and skills required by a design and

technology teacher specialising in food technology in secondary schools. This is not a

course in ‘food studies’ but will indicate what a food technology teacher may be required to

teach and how the principles of design and technology may be taught through the medium

of food. The requirements of food technology at lower secondary and upper secondary

levels are discussed, as is the contribution that food technology specialists can make to

other courses, such as catering, and extra-curricular activities.
