The inspiration for this recipe is the incredible flavor of peach salsa—it beats any other flavored salsa hands down! These quesadillas are especially popular with Southwestern Bears.
1/2 teaspoon chili powder
1/2 teaspoon cumin
2 whole chicken breasts, boned and skinned
4 (10-inch) flour tortillas
1/3 cup shredded Monterey Jack cheese
1/3 cup shredded Jalapeno Jack cheese
1 roasted red bell pepper, seeded and diced
1 jar peach salsa*
