ABSTRACT

Flank steak is the best cut of beef for a marinade. It allows the flavor to penetrate completely. However, other cuts of beef—such as T-bone and rib eye—can also be used.

2 tablespoons fresh lime juice

grated zest of 1 lime

2 cloves garlic, minced

3/4 teaspoon hot chili oil

1/4 cup vegetable oil

1 teaspoon red pepper flakes

1/4 teaspoon cayenne pepper

1/2 cup red wine

1 tablespoon sugar

2 tablespoons soy sauce

1 to 2 pounds flank steak
