1 standing rib roast (3 ribs minimum)

4 cloves fresh garlic, peeled and sliced

fresh thyme, several sprigs

1/4 cup whole black peppercorns

4 tablespoons (1/2 stick) unsalted butter, softened

3 medium onions, quartered

4 shallots

kosher salt to taste
