ABSTRACT
No book referring to the bistros of Paris would be complete without the mention of Chez Benoit. Monsieur Benoit opened his simple bistro here in 1912 and he has been going strong ever since and has won a wide reputation for the simple but superior quality of his cuisine and his regional wines.
