ABSTRACT

The fact that Chez Paul has two entrances, one on the quay by the Seine, the other giving on to the tranquil Place Dauphine (where there is a terrace for eating out-of-doors), explains the popularity of this charmingly situated little bistro. The clientele is international, largely tourist. Many foreign visitors to Paris have heard of Chez Paul and la grande Spécialité de la Maison, the Escalope de Veau en Papillote, which they invariably order when they come here to restore themselves after visiting the adjacent Conciergerie, Saint-Chapelle (and its magnificent twelfth- and thirteenth-century stained-glass windows) and Notre-Dame.
