ABSTRACT

There are some who may say that I am wrong to call Chez les Anges a bistro. Admittedly, it is not the rough-and-ready bistro with an old zinc, sawdust on the floor, and mirrors on the walls. Nevertheless, I classify it as a bistro type of restaurant for a number of reasons, one being that you will again find here that intime, family atmosphere which is explained by the fact that le Patron takes the place of, and acts as, the head waiter and himself attends to you at table.
