ABSTRACT

The widely known "Sweet and Sour" dishes prepared by Chinese are particularly favoured by foreign residents in the country. Certain meats and vegetables are prepared in the same manner, but fish, when prepared with the so-called sweet and sour sauce is exceptionally appetising. The sauce is made with the vinegar and sugar and its flavour has much 111 common with the oil and vinegar French salad dressing. There are a number of variations of the sauce, according to the districts of China. ::Some sauce is prepared more sour than others, it usually ditlers according to individual taste. The sauce is sometimes prepared with pork, fiSh or vegetables but sometimes separately as shown in the iollowing recipes.
