ABSTRACT

The fundamental difference between Chinese and Western food lies ii} the method of cooking, not in the materials. There are two Chinese proverbs saying 'Feed moderately on wholesome food; garden herbs surpass rich viands,' and 'Only eat fresh fish and ripened rice.' From these two proverbs we understand that a delicious dish is not estimated by its cost but by the selection of the best types of foodstuffs and the choice of the right material for each particular dish.
