ABSTRACT
The general features of solids, liquids and gases are introduced elsewhere (see 18). Individual substances can exist in different states, however, depending on external conditions. Here we are concerned with changes in state. To describe these processes we use water and its response to temperature as an example. Not only is this a theme to which we can readily relate, but state changes of water are fundamental to understanding many key environmental processes.
