ABSTRACT
During the last years, very complex phenomena have been successfully studied with the help of sophisticated numerical tools. Every year, the accuracy of the results coming from the numerical simulation of different industrial processes is increasing due to a better knowledge of both the governing laws, which describe the physics and the constitutive laws, which defi ne the food behavior.
