Following the ecological rhetoric of recent Olympics, Tokyo 2020 organizers are advertising a sustainability legacy, while aspiring to showcase the excellence of Japanese cuisine. However, internationally recognized food production, safety and ecological standards remain far from common in Japan. Therefore, a whole range of interest groups has been struggling to influence the Olympic food procurement standards. Utilizing the increased international attention during the Games as a form of foreign pressure (gaiatsu), civil society organizations are hoping to make use of this momentum and push for more sustainable, environment- and animal-friendly forms of food production in Japan.
