ABSTRACT

Honewort is found in rich woods, moist forests, thickets, and floodplains, and on the banks of streams from western New Brunswick to Manitoba, south to Georgia, Alabama, Arkansas, and Texas. Honewort is a succulent wild edible herb that looks like parsley and smells like celery. Mitsuba is widely employed in Japanese cuisine, and serves as a guide to the uses and culinary preparation of honewort. Honewort is essentially a wild form of mitsuba, a well-known vegetable and condiment of Asia, although almost unknown in North America. The cultivation of mitsuba is very advanced in Japan, where considerable amounts are grown in hydroponic culture, cultivars have been selected, and research on cultivation and processing has been conducted.
