ABSTRACT
Chapter 3 explores the process of food hybridisation, that is, how colonists were forced by local circumstances to experiment with unfamiliar foods but came to appreciate them. Curiosity and fear, two conflicting forces, acted at the same time, in relation to the unknown ingredients that colonists and travellers were coming into contact with.
