ABSTRACT

In the United States, the quality of apples used for juice is subject to regulations under the Federal Drug and Cosmetic Act, while in Canada, the apples are subject to inspection by the Dominion Department of Agriculture. In Mexico and other Latin American countries, producers are starting to become aware of the importance of complying with regulations for acceptance of apples for juice processing. K. C. Lamb and M. R. McLellan reported good results in growing low-cost apples strictly for juice processing. Filtration is the best alternative to produce clarified apple juice of good quality, but the process is discontinuous and includes high operating costs. An option of automating the pressing of apples is the use of a piston or pack press, such as the Bucher Guyer basket press. Apple juice may well be one of the most appealing apple products, regardless of idiosyncrasy, culture and regional cuisine.
